Little history
The chocolate mousse was created by the Swiss Charles Fazi, cook to Louis XVI and in 1755 the chef Menon described it under the name “Chocolate mousse”, a term which also applied to the foam on the chocolate drink.
ingredients

200g dark chocolate

30g sugar

Salt

6 eggs

30g butter
Preparation
1. Melt the chocolate and the butter in a double boiler. Let cool.

2. Separate the yellows from the whites. Beat the egg whites with a pinch of salt. Then at the last minute add the sugar and whisk.

3. For the yolks into the chocolate, stirring vigorously.
​
4. Gently fold the white snow into the chocolate. Mix gently with a spatula, avoiding breaking the egg white.
​
5. To finish, your sparkling chocolate into small jars. Keep in the fridge for at least 3 hours.
