Little History
According to legend, this recipe was invented by Louis XV. Indeed, he was in his hunting lodge when he discovered that all he had was onions, butter and champagne. He cooked the three ingredients and made the first French onion soup.
Ingredients
For the soup :

6 peeled yellow onions.

55g butter.

125 ml red wine.

30 ml cognac

1 1 liter of beef broth

1 liter of chicken broth
-
15 ml light toasted flour
-
1 pinch of ground nutmeg
For the garnish :

200 g (2 cups) grated Gruyere cheese

12 slices of baguette bread, about 1 cm (1/2 inch) thick, toasted

1 small clove of garlic, cut in half
Preparation
Soup :
1. Cut the onions into wedges, then slice each wedge into short strips.
2. In a large saucepan over medium heat, soften the onions in the butter for 15 minutes, stirring a few times. Continue cooking over high heat for 15 minutes or until the onions are caramelized, stirring constantly and scraping the bottom of the pan. Deglaze with the wine and cognac. Reduce until almost dry. Add the chicken and beef broth, grilled flour and nutmeg. Mix well.
3. Bring to a boil and simmer over medium-high heat for 30 minutes or until the soup has halved. You will get about 1.25 litres (5 cups) of broth. Season with salt and pepper.
Garnish :
4. With the rack in the middle position, preheat the broiler. Place 4 bowls on a baking sheet.
5. Meanwhile, lightly rub each crust with the half cloves of garlic.
6. Divide the soup among the bowls and add 30 ml (2 tablespoons) of cheese per bowl. Spread 3 croutons on each soup and sprinkle with the remaining cheese.
7. Bake for 5 minutes or until cheese is melted and browned.
