Mimolette
The mimolette (also called the ball of Lille), was created during the reign of Louis XIV, when France and the Netherlands were at war and the importation of Dutch cheeses were prohibited by commercialism under Colbert.
The Mimolette is the most famous orange cheese! It's an uncooked hard cheese made from cow's milk, originating in the North. This cheese is in the form of a sphere of about 2 kg, the rind of which reveals more and more roughness during ripening.
The rind is brushed at the end of ripening and is very rarely coated with paraffin. The color of its orange flesh comes from a natural dye called annatto.

Cantal
Cantal (or fourme de cantal) is an uncooked pressed cheese from France, originating in the Massif Central and made from raw or pasteurized cow's milk. The appellation of origin of this fourme is preserved by an AOC in France and by an AOP at European level.
