Specialty of the south of France, comes from Nice, hence its name.

Ingredients

5 tomatoes

1 cucumber
-
100 g of peeled broad beans
-
6 small local artichokes, sliced
-
1 green pepper
-
2 small spring onions
-
10 basil leaves
-
1 clove of garlic
-
3 eggs
-
6 anchovy fillets
-
50 g of black olives from Nice
-
4 tablespoons of olive oil
-
1 pinch of salt
-
1 pinch of pepper.
Preparation
1. Wash the tomatoes, cut them into quarters and salt them. Put them in a colander to disgorge. When preparing the salad, drain them well.

2. Bring a pot of water to a boil. When it boils, immerse the eggs in it for 10 minutes of cooking. Drain and cool them in ice water.
3. Turn the artichokes and slice them. Peel the beans. Cut the eggs into slices. Wash, peel and slice the cucumber, peppers and onions.
4. Rub the salad bowl with the peeled garlic clove and fill it with all the vegetables. Add well over the Nice black olives (unpitted, best) and the anchovies, cut into pieces.
5. Make a sauce with the oil, minced basil, then season with salt and pepper. Pour over the bowl and enjoy immediately.
